Rounding out my posts about El Salvador this week, I thought it would be helpful to list gluten-free and Celiac resources in Central America. While technically not Central America, I also included Mexico in this list for your convenience. Unfortunately, there isn’t that much information out there for Central America in general. If you have any resources, please post them in the comments section below. Thanks!

Do you have any information about GF dining in Asuncion, Paraguay? My GF son is headed there this week with his GF family.
Hi Anne. I am still working on my South America post so I’ve only found one Paraguay link so far: http://www.fupacel.org.py/
Thanks so much! I will send this on to him. Fortunately, he and his wife speak Spanish.

Do you have any information on Roatan? I am traveling to West Island in July and am terrified I won’t be able to find gluten free, any suggestions would be appreciated
Janet, I went to Roatan but was on a cruise so I ate on the boat. I do remember they had a lot of seafood on the island. I will ask around and see what I come up with!
